1 cup coconut milk
1/2 cup cultured coconut milk or coconut milk yogurt
1/3 cup shredded coconut, lightly packed
2 cups frozen pineapple
1 t vanilla extract, optional

1/2 cup shredded yellow cabbage
1 cup cream of coconut
1 cup cultured coconut milk, if you can find it, otherwise, yogurt or kefir of your choice
1/2 t pure vanilla extract
Variation: make a soft-serve sorbet or “creamsicle” by adding ice cubes until a thicker consistency is reached and pouring into molds and freezing until set.
