Minty Smooth

1/2 cup prepared mint tea, cold

1 cup plain kefir or yogurt of your choice

1tbs honey

handful of fresh mint leaves

a few ice cubes, optional

place the mint in your hand and give it a good smack (seriously) to gently release the oils without disturbing the chlorophyll (it can make mint bitter).

add the mint to the Vitamix container followed by the remaining ingredients.

blend until smooth.

Mint Jules

Here’s my nonalcoholic version of Mint Julep, ‘cuz, why not?

handful of fresh mint leaves

1 tsp pure spearmint extract or oil of spearmint

3 limes, peeled

sweetener of your choice to taste

2 cups water

Pour 1/2 cup of water into container and add spearmint extract or oil and pulse for a few seconds.

Place the handful mint leaves in your hand and give them a good smack (seriously) to release the oils but not damage them.

add mint leaves and remaining ingredients to the container and blend until you can just see traces of the mint leaves.

Serve over ice.

Cherry Mint Smoothie

1 cup cherries of your choice, washed, stemmed, and seeded

handful of mint leaves, stemmed

1 tsp vanilla extract, optional

1 cup plain or vanilla yogurt or kefir of your choice

The simplest (least messiest?) way to pit a cherry is to poke a straw through it where the straw catches the seed. Works for me. Might work for you.

Blend well until smooth, adding more yogurt or water if necessary for desired consistency.

Additional options:

  • Add one tablespoon unsweetened cocoa powder. You may also want to add a little sweetener of your choice to reduce any bitterness
  • Add 1 teaspoon pure almond extract.
